Mini Rocklea Road Cupcakes

I baked these cute cupcakes a few months ago but i forgot to blog about them. I miss baking so much!

My friend gave me 3 packs of Rocklea Road (which is chocolate coated marshmellow and nuts) and I decided to make baby cupcakes out of them


That is my handy MIX book from women's weekly where I get all my baking inspirations from. I chopped the Rocklea Road up and placed them on top of the mini cupcakes. The frosting was a bit watery but it tasted good and it wasn't too sweet. The cake was moist and spongey! This is one of the best chocolate cake recipe i've ever tried.

My partner's colleagues finished the cupcakes and left me a note! :)


Adapted from my Women's Weekly MIX recipe book:
Chocolate cupcake recipe - (makes about 24 average sized cupcakes)
125g butter, softened
1 teaspoon vanilla extract
1 1/4 cups self-raising flour
1/2 cup cocoa powder
2/3 cup water

For the frosting (which didn't turn out well as it was a bit too watery) I just mixed cream, icing sugar and cocoa powder, but tasted pretty good still!
