Herman the German Friendship Cake

I am a recipient of herman the german friendship cake! I have been busy tendig to this bubbling thing everyday. It is a sourdough base recipe that goes on and on, and can be passed down to friends and family. My lovely colleague gave me the instructions for the cake and I just have to dutifully follow them, stir, add stuff occasionally and ensure it is alive and bubbling. It also makes the house smell like a bakery!

Today it's time to bake it :) i am going to miss him...


I am not a fan of dense fruit cake with raisin in it so I replaced the raisins, cinnamon and apples with banana and choc chip instead (should have added nuts too!). The result......


Is a light and fluffy cake! So fun and hopefully i will receive a batch of the batter again soon! Ive divided mine into four portions and gave them away, it's a cake that never stops giving.

Heartshaped Strawberry Jelly Cheesecake

one of my favourite dessert is a good rich creamy cheesecake.

i made this probably a year ago, so i forgot the recipe, sorry!!! I think it is one of the recipe behind the phil cream cheese package.

If not any normal cheesecake recipe will do
these are the ingredients i used



use the heartshape cookie cutter to cut the sliced strawberries and place them on top of the cheesecake

this caused a mess! need to pour is slowly (so you dont distort the cheesecake) and ensure that the jelly spreads evenly

left over lovey strawberries + jelly
yummy!

loved how it turned out although i could be neater...need to use a sharp knife and clean it each time you cut

there u go, u have strawberry, jelly, creamy cheese and biscuit all in one bite.

Simple Puff Pastry Sausage Roll


Made these yummy sausage rolls with the help of my cousin

All you need is 500g of mince meat (pork/chicken or beef)
3 sheets of puff pastry

For the meat marinate: put in 2 tbspn of ketchup
1/2 tbspn of salt
2 tbspn of chopped onions
2tbspn of chopped carrots
1 teaspoon of worchester sauce
1 teaspoon of olive oil

marinate for about 30 minutes and u can start rolling them!
With the puff pastry, cut them into 4 long and even strips, and place the meat in the middle of one strip, and cover on top another strip and seal the sides with water! Easy peasy!
Put in a preheated oven of 160 degrees celsius and baked for about 20 minutes.

Then brush the sausage rolls with egg wash about 5 minutes before it is done.

Delicious snack and party food for everyone!

Little Balls of Joy

        '
These balls of bitesize milk biscuits were my childhood favourite. It brings back memories when i eat them! It is milk-flavoured, slightly sweet, and when you pop them into your mouth, they will melt and dissolve into powdery crumbs. Really yummy and can be bought in most asian stores


whenever I eat them, they also remind me of my fav japanese character last time: Kogepan (it means burnt bread or something) haha

CMI Cupcakes

Hello MFF Perth is back! sorry for the lack of posts lately as I had to prepare for my exams right about my wonderful trip to Japan, this only added to my post-japan-depression. So now my holiday is over and my exams are over i can finally start contributing to the blog :)
I have taken a total of 2000+ photos in japan and they will need to be sorted out and edited before i write the japan entries ok? please be patient and dont stop reading the blog!!!
To all the hard workers out there, TGIF. i know no one can concentrate on anything on fridays, so just continue making toilet trips, coffee or tea, chat with your neighbouring colleague, read the papers, take a long lunch and your day will be over soon! u are welcome for the tips btw.


This was an entry that i've written longgggg ago when i was infected with the baking bug. Just a short one about failure cupcakes.

I tried to make low-fat cupcakes because I have been baking too much recently. I felt lost without cupcakes in the house, i felt empty without eating any cupcakes for the day, so if i bake low-fat ones I can still continue to eat them everyday right?
Went home after a dreadful day at work, i thought baking will lift my spirits up.... sounds like a good plan! bake and eat sugary mood-lifters afterwards...


Read on and laugh, its ok.

So i started mixing the ingredients together and i realised it's a bit too watery, but its low-fat, maybe it's meant to be watery!
Then i thought of a brilliant (NOT!) idea of putting a spoon of custard in the middle of the cupcake, sounds good so far. maybe my spongey cupcake will have a gooey custard filling in the middle...maybe...

!???!?!?! WHAT HAPPENED TO THEM!? Where is the round spongy cupcake with custard filling?? Nvm, i thought they still looked quite yummy..
(actually they were quite yummy, just that i didn't expect them to turn out this way)


I decorated the cakes with strawberries (i have heaps of them, i kept buying because it's so cheap but I cannot finish them, what is wrong with me?), drizzled white chocolate sauce, topped with icing sugar.

the cupcakes were ok, quite nice but they were just not what i wanted to make. the texture was wrong, it wasn't spongey with custard filling, the custard made the cake moist, taste a bit like a hardened pudding. Despite all that, I still had feedback from nice people that the cakes were good :)
as long as they know i didnt meant for it to turn out this way, they might think its a really good custard-pudding cake! hahaha
so on top of a shitty day at work, i went home and baked cup-puddings ...
this was not my day....

MissFattyFoodie's Special - Mini Rocklea Road Cupcakes

Mini Rocklea Road Cupcakes

I baked these cute cupcakes a few months ago but i forgot to blog about them. I miss baking so much!

My friend gave me 3 packs of Rocklea Road (which is chocolate coated marshmellow and nuts) and I decided to make baby cupcakes out of them


That is my handy MIX book from women's weekly where I get all my baking inspirations from. I chopped the Rocklea Road up and placed them on top of the mini cupcakes. The frosting was a bit watery but it tasted good and it wasn't too sweet. The cake was moist and spongey! This is one of the best chocolate cake recipe i've ever tried.

My partner's colleagues finished the cupcakes and left me a note! :)


Adapted from my Women's Weekly MIX recipe book:
Chocolate cupcake recipe - (makes about 24 average sized cupcakes)
125g butter, softened
1 teaspoon vanilla extract
1 1/4 cups self-raising flour
1/2 cup cocoa powder
2/3 cup water

For the frosting (which didn't turn out well as it was a bit too watery) I just mixed cream, icing sugar and cocoa powder, but tasted pretty good still!

These apple pie pockets are so small you can finish them up in 2 bites. It makes eating them easier and i think they make good party food.

Missfattyfoodie's Super Fudgey Brownie

The cravings for chocolatey fudge kicked in one weekend and so I headed out to phoon huat to get some ingredients for making some brownies! who would say no to hot fudgey gooey brownies? so I made more to share the goodies (or carbs)

Super Fudgey Brownies
 adapted from Mrs Fields brownies recipe


Melting the butter and chocolate in the saucepan. Really tempted to eat the melted chocolate off the stove!


Hot from the oven! warm gooey brownie, perfect for the really sweet tooth!
Cut them into cubes for eating after chilling them in the fridge for an hour. They taste better after being chilled because they are more set and doesn't break off so easily.

decided to try out my new star/heart cutters on the brownies as well. looks abit deformed but at least i had fun!

Super Fudgey Brownies
 adapted from Mrs Fields brownies recipe

Ingredients
6 ounces unsweetened baking chocolate
1 cup salted butter, softened
4 large eggs
2 cups granulated sugar
(the sugar was a tad too much, I reduced it to 1 1/3 cup sugar)
1 tablespoon vanilla extract
(this was also reduced by me to 1/2 tablespoon)
1/2 cup all-purpose flour
1 cup semi-sweet chocolate chips

Directions
Preheat oven to 300°F and grease an 8x8 baking pan.
Combine unsweetened chocolate and butter in a medium saucepan and melt over medium low heat, stirring constantly until pieces are almost melted.
Remove from the heat and stir until smooth.
In a large bowl using an electric mixer on medium speed, beat eggs until light yellow in color--about 5 minutes.
Add sugar and blend on low until thoroughly combined.
Add vanilla and melted chocolate to the egg sugar mixture.
Blend on low until smooth.
Add the flour and mix thoroughly.
Pour batter into greased pan.
Smooth surface with a spatula, and sprinkle uniformly with chocolate chips.
Bake on center rack of oven for 45-55 minutes.
The batter should be set and a toothpick inserted into the center should come out clean.
Do not overbake.
Cool to room temperature.
Cover and refrigerate for at least one hour.
Cut and serve chilled.

And introducing the world's greediest dogs, who choose food over their owner..

The dogs were really pissed that they were not allowed to eat the chocolates, they ended up turning their back on me the whole day. what kind of loyal pawpals are you!

MissFattyFoodie's Strawberry Cake

Missfattyfoodie finally mustered some courage and baked a layered cake!
This is only my second time making a layered cake as the first one was a COMPLETE disaster, read on and you will see why.

I was really pleased with the result as it actually looks like a proper cake! It was yummy too.


I used instant butter cake mix for the cake itself, bought it from coles for $0.87 only! Good alternative for lazy people who loves to bake (like me)
I chopped up some dark chocolate for decoration and I used almost 1 1/2 punnets of strawberries. (told you i cant get enough of strawberries!)

To make the whipped cream (my first time) i used about:
400 ml of thickened cream
1/2 cup of icing sugar (you can add more if you want it sweeter)
Whip the cream till it becomes fluffy.

I baked the cake in 2 portions because I had a bad experience last time when I sliced a sponge cake (you will see why later). In a separate bowl, i stirred in some chopped strawberries with the whipped cream and spread it onto the first layer of the cake.

After that, I put the other layer onto the cake and spread whipped cream all over it. I decorated it with chopped chocolates, piped some stars at the side and added MORE strawberries on top. Then, I have to painstakingly throw/dabbed chopped chocolate pieces at the side of the cake. Does anyone know an easier method to put stuff at the side of the cake?

 I like the thick middle layer of strawberry and cream

I didnt even want to write 'be happy' on it, someone wrote on the cake and the first letter looked like a B instead of M so we had to change the words. LOL

MissFattyFoodie's Special - Hot Waffles with Strawberries and Cream

On a typical Saturday morning -
 missfattyfoodie " hey wake up, there are some hot waffles!"
mrfatty "leave me alone, let me sleep during the weekend!"
missfattyfoodie - takes the super firm pillow and hit mrfatty till he wakes up.

I bought some waffles in the grocery store and all I had to do was toast them!
Since my fridge has a never-ending supply of strawberries i will use them whenever the opportunity arises.
I bought light thickened cream and whipped it with icing sugar for ages. I finally decided to give up, then i read the side of the label that said "does not whip"

lesson learnt - read the labels carefully before you purchase something.
there you go! waffles topped with strawberries, chocolate sauce, icing sugar and does-not-whip light thickened cream
it was a pleasant morning! i love saturday mornings with nice breakfasts!

MissFattyFoodie's Special - Home Made Classic Apple Pie

MissFattyFoodie made a healthy yet delicious home made dessert taken from the John Butler cookbook. Eat it as it is, hot from the oven, or serve it with a scoop of vanilla ice cream. Ingredients are pretty simple as well, preparation probably requires quite abit of time. However, the result is worth all the effort!

Couldn't decide which color apples to use so decided to buy a mixture of both. Look at the gorgeous colour! An apple a day keeps your morning blues away....
After placing the rolled out dough on the pan, dust it with flour so that it won't turn sticky or moist. My patient 4-legged furry friends, who thought I was preparing food for them.

The most tedious part would be peeling, coring and slicing the apples. Time consuming and tiring.
The preparation took such a long time that my not-so-loyal-now audience gave up waiting for any bits of pie and went to sleep instead...
she's a natural gymnast!
The apple mixture sitting on top of the dough in the pan, evenly coated and ready to be put in the oven once the dough layer is placed above it.
Before putting it into the oven, the pie, brushed with egg yolk and design with patterns.
Fresh and hot from the oven!

A slice of apple pie, laden with apple slices covered with thin flaky pastry.

It's time to stock up on apples and try this recipe!


Flaky Pie Pastry recipe - for light and delicious pie crusts
1/2 cup cold water
2 cups all purpose flour
3/4 cup shortening
a pinch of salt

Directions
In a small bowl, dissolve salt in water.
Place flour and shortening in a medium bowl.
Work shortening into flour until shortening is broken into pea-size pieces.
Add water to mixture.
Mix together until dough forms a ball.
Classic Apple Pie
1 portion of Flaky Pie Pastry
7 tart apples
2 tbsp all purpose flour
1 cup brown sugar
1 tsp cinnamon
a pinch of cloves
a pinch of salt
2 tbsp butter
1 egg, beaten
Directions
Preheat oven to 375F
Divide dough into two portions, one slightly larger than the other
Form each portion of dough into a ball
Wrap smaller ball of dough in plastic wrap and refrigerate
On a lightly floured surface, roll out larger ball of dough into an 11-inch circle, 1/8 inch thick.
Line a 9-inch pie plate with dough.
Trim away excess dough from edges.
Peel and core apples. Slice thinly.
In a large bowl, combine flour, brown sugar, cinnamon, cloves and salt.
Add apples to flour mixture. Toss lightly to coat.
Fill pie shell with apple mixture.
Dot apple filling with butter.
Brush edge of crust with egg
Roll remaining dough into an 11-inch circle, 1/8 thick.
Cut slits in dough, and place on top of pie.
Crimp edges of pie.
Brush top of pie with egg.
Bake for 45-50 minutes, until crust is golden brown.
Tip: Do not let apple mixture sit out for too long as mixture will become syrupy.
