CMI Cupcakes

Hello MFF Perth is back! sorry for the lack of posts lately as I had to prepare for my exams right about my wonderful trip to Japan, this only added to my post-japan-depression. So now my holiday is over and my exams are over i can finally start contributing to the blog :)
I have taken a total of 2000+ photos in japan and they will need to be sorted out and edited before i write the japan entries ok? please be patient and dont stop reading the blog!!!
To all the hard workers out there, TGIF. i know no one can concentrate on anything on fridays, so just continue making toilet trips, coffee or tea, chat with your neighbouring colleague, read the papers, take a long lunch and your day will be over soon! u are welcome for the tips btw.

This was an entry that i've written longgggg ago when i was infected with the baking bug. Just a short one about failure cupcakes.
CMI (cannot make it) CUPCAKES :

------------------------------------------

I tried to make low-fat cupcakes because I have been baking too much recently. I felt lost without cupcakes in the house, i felt empty without eating any cupcakes for the day, so if i bake low-fat ones I can still continue to eat them everyday right?
Went home after a dreadful day at work, i thought baking will lift my spirits up.... sounds like a good plan! bake and eat sugary mood-lifters afterwards...

Read on and laugh, its ok.

So i started mixing the ingredients together and i realised it's a bit too watery, but its low-fat, maybe it's meant to be watery!
Then i thought of a brilliant (NOT!) idea of putting a spoon of custard in the middle of the cupcake, sounds good so far. maybe my spongey cupcake will have a gooey custard filling in the middle...maybe...

!???!?!?! WHAT HAPPENED TO THEM!? Where is the round spongy cupcake with custard filling?? Nvm, i thought they still looked quite yummy..
(actually they were quite yummy, just that i didn't expect them to turn out this way)

I decorated the cakes with strawberries (i have heaps of them, i kept buying because it's so cheap but I cannot finish them, what is wrong with me?), drizzled white chocolate sauce, topped with icing sugar.

the cupcakes were ok, quite nice but they were just not what i wanted to make. the texture was wrong, it wasn't spongey with custard filling, the custard made the cake moist, taste a bit like a hardened pudding. Despite all that, I still had feedback from nice people that the cakes were good :)
as long as they know i didnt meant for it to turn out this way, they might think its a really good custard-pudding cake! hahaha
so on top of a shitty day at work, i went home and baked cup-puddings ...
this was not my day....

MissFattyFoodie's Special - Mini Rocklea Road Cupcakes

Mini Rocklea Road Cupcakes

I baked these cute cupcakes a few months ago but i forgot to blog about them. I miss baking so much!

My friend gave me 3 packs of Rocklea Road (which is chocolate coated marshmellow and nuts) and I decided to make baby cupcakes out of them

That is my handy MIX book from women's weekly where I get all my baking inspirations from. I chopped the Rocklea Road up and placed them on top of the mini cupcakes. The frosting was a bit watery but it tasted good and it wasn't too sweet. The cake was moist and spongey! This is one of the best chocolate cake recipe i've ever tried.

My partner's colleagues finished the cupcakes and left me a note! :)

Adapted from my Women's Weekly MIX recipe book:
Chocolate cupcake recipe - (makes about 24 average sized cupcakes)
125g butter, softened
1 teaspoon vanilla extract
1 1/4 cups self-raising flour
1/2 cup cocoa powder
2/3 cup water

For the frosting (which didn't turn out well as it was a bit too watery) I just mixed cream, icing sugar and cocoa powder, but tasted pretty good still!

Perth - Deli Chicchi at Ardross St

Had Thursday off work so I can study and catch up with my lectures. Instead, I went to meet one of my closest friend from uni for lunch and coffee. this smart girl here has answers to everything just graduated from law school. She's leaving Perth next month and will be going to canada next year to travel and work! i will miss u, and hopefully if i dont spend all my money on food i will go visit u!

we had lunch at Sundays Everyday where i ordered my teriyaki chicken udon with the chicken separated again.. i will never get sick of that dish

The rain was pouring down heavily so our initial plan of going for some beer changed to going to a cafe for hot coffee. Why do I always feel like having coffee and snuggling under a blanket whenever it is raining?

This is my mocha (sg mff's fav coffee) with a small glass of dark chocolate chips at the side.

We sat outside with our coffee and cupcakes and chatted over the faint sound of the rain.

had to order a cupcake as there were no cupcakes at home and i was craving for one very badly.
this was my friend's cupcake. Their cupcakes really remind me of what i baked before! i love Deli Chicchi's selection of cakes as they are all baked freshly and looks home-made, which gives you this very cosy feeling when you have coffee here.

Rating: 4/5 -because it is a really nice and cosy cafe. There were people who brought their dogs with them, i want to bring my dogs to a cafe too! I have not tried that before because I dont want to be chased out with 2 dogs held on one hand, and another hand holding my coffee and cupcake! I should try and see how my dogs react, i know for sure they will be wagging their tails and jumping on strangers because they are such attention seekers.

Location: Ardross St, Applecross

then we went to good grocers to look at the overpriced groceries which blended in with the richer Applcross suburb. I heard it was opened by my former employer and they just take their goods from *** and marked it up, this is from a company who emphasizes on supporting locals and providing better service to the local community.

with their exorbitant prices, i could still find a few cheaper stuff to buy.bought the white chocolate apple $1.99 which sounds delicious but does not taste as good as it sounds -- someone finished it without giving me a bite :(

MissFattyFoodie's Special - Buttercream Cupcake

Perth
Made these really cute cupcakes!

Eating the frosting made me feel really good but guilty shortly afterwards. (pure butter and icing sugar!!)
Gave some to my lovely neighbour who I found out was pregnant so she said it's perfect for her. Then I thought to myself, what about people who are not pregnant (like me) who eats sugary cupcakes? What will I eat when I'm pregnant then?

ok i better not think too much...its scary.
I was lazy so i just used vanilla cake mix for the cake.
Frosting:

1 cup butter
2 cups icing sugar
2 tablespoon milk
1/2 teaspoon vanilla essence
Beat it till it looks like frosting. lol

Frosting is mainly for presentation, I always advise others who dont like their cakes too sweet to just remove the frosting. I never add any colour to this because i like the creamy yellow colour!

How do i make white frosting?

MissFattyFoodie's Special - Fairy Cupcake with Mandarin Marmalade

Perth

MissFattyFoodie bakes again!
My urge to do some baking was so strong I went to visit a few baking shops and they were closed! Why do the shops in Perth close so early?!?!?!
On a Saturday morning, I got up and started getting ready to visit this baking shop near my house. I arrived at the shop (which was near my house) at 1pm and found out that they close at 12.30pm!!!!!! :(((((((((((((((((((
I was sooo disappointed, but i decided to go to Fremantle (again!) to check if the baking shop there is open. I went the day before at 5.45pm and they close at 5.30pm. I told you luck is never on my side!
I always visit this very small and cute baking shop along Market Street.
The store assistants there are always so friendly, approachable and helpful. I brought my piping bag along so she can tell me what connectors I can attach to it, and she gladly showed me all the tips and connectors I can choose from!
I bought a few of my muffin/cupcakes holders from this shop before. The prices are reasonable but may be slightly higher than what you can get from the grocery stores. There are a lot of baking stuff available here, if you cant find the baking supplies you want in your grocery stores, come here and get it!
They have very pretty cupcake holders and cake decorations. I always cannot resist and will buy a few home!

Location: The Home Provedore Baking Essentials35 and 39 Market Street. +61 8 9430 9334

I happily bought the stuff I need and went home to bake...

Fairy Cupcake with Homemade Mandarin Marmalade

I don't usually bake a lot (until recently) and my previous cupcakes have turned out to be complete disasters. This cupcake is less sinful than the ones with the frosting on top (i love those too!) and it is very pretty as well! Inspired by my good friends who love to bake, I have developed a passion for cupcakes recently and I will share more of my bakes on the blog!

For the cupcake I used the recipe below, for more convenience you can just use a prepacked buttercake mix.

Vanilla Cupcake Recipe (from Women Weekly MIX): makes 24

125g butter, softened
1 teaspoon vanilla extract
2/3 cup (150g) caster sugar
3 eggs
1 1/2 cups (225g) self-raising flour
1/4 cup (60ml) milk

additional: 1/2 cup of thickened cream, whipped or instant whip cream.

1. Preheat over to 180C/ 160C fan-forced. Line two deep 12-hole patt pans with paper cases.
2. Beat butter, extract, sugar, eggs, flour and milk in small bowl of electric mixer on low speed until ingredients are just combined. Increase speed to medium, beat about 3 minutes or until mixture is smooth and changed to a paler colour. Drop slightly rounded tablespoons of mixture into paper cases.
3. Bake cupcakes about 20 minues. Turn cakes, top-side up, onto wire racks to cool.
4. Meanwhile, whip the thickened cream.

I used Devondale butter (in Australia) as it is very rich and makes better cookies/cakes.
I bought a bigger muffin tray for my cupcakes so I can save time and not bake them in separate sessions. This is the reason why I baked fairy cupcakes - My colleague's home-made sweet mandarin marmalade.
Plain vanilla cupcakes cooling on the rack

Take a sharp and small vegetable knife and cut a circle in the middle of the cupcake around 1cm deep. Put the whipped cream into the 'hole' and put the mandarin marmalade or jam on top.
Cut the circle that was removed from the cupcake into half. Put another layer of whipped cream in the centre of the cupcake, and stick the semi-circles in the middle as the fairies' wings.

Sprinkle icing sugar at the top and put them in a glass dome for better presentation! You can even be creative and put pieces of fruits on top of the cake.

I hope you will try this very simple cupcake recipe!

Share them with your friends and family!

MissFattyFoodie Specials - Frosted Nutella Cupcakes

Singapore

This is a relatively easy recipe to make with simple ingredients and is pretty fuss-free. Everything can be bought from the local supermarket and is a delight for most people, especially with the use of Nutella! Recipe inspired by Donna Hay's cupcakes.

Just for fun, I also put this post up at bakebakebake.

Frosted Nutella Cupcakes
10 tbsp(140 grams) butter, softened
3/4 cup white sugar
3 eggs
1/2 tsp vanilla
1 3/4 cups (200 grams) sifted flour
1/4 tsp salt
2 tsp baking powder
Nutella, 1 jar (375g)

Directions
Preheat oven to 325F.
Line 12 muffin tins with paper liners.
Cream together butter and sugar until light and fluffy, approx 2 minutes.
Add in eggs one at a time, until fully incorporated. Better to beat the eggs in a separate bowl before adding it in, easier to mix in.
Add vanilla and mix it in completely.
Stir in the flour, salt and baking powder separately, until batter is uniform and no flour remains.
Using a table spoon, fill each muffin liner with batter.
They should be 1/2 full.
Top each cake with 1 1/2 tsp Nutella. (you can always add more/less of course)
Swirl Nutella in with a toothpick, making sure to fold a bit of batter up over the nutella.
Bake for 20 minutes.
Remove to a wire rack to cool completely.

Makes 12.

After topping the batter with one huge spoonful of nutella, and in between stealing mouthfuls of nutella from the jar.

i covered the entire chunk of nutella with batter, leaving only the top for swirling with the batter. use a toothpick to fold in the batter above the nutella first before swirling it.

freshly baked cupcakes, hot from the oven.

letting them cool off first before adding the frosting and toppings.

can be eaten when its nice and warm too.

my finished cupcake with silver balls and colored bunny&chick toppings.

The reason why i covered the entire chunk of nutella under the batter instead of leaving most of the nutella above the batter is because, after biting into the cupcake, there will be a moist chocolate centre inside. top it off with a chocolate frosting, it is just nice for a chocoholic like me! This came as a pleasant (and a tad sweet for some) hidden surprise for most of the family, friends and neighbours who tried it.
But if you find this a tad too sweet, you can always reduce the chocolate added into the cupcake or minus the chocolate frosting/sugared toppings above.
